Grapes are hand-harvested and meticulously sorted to ensure only the finest quality reach the press. Following gentle fermentation in temperature-controlled tanks, the wine undergoes a secondary fermentation in the bottle, where it develops its signature bubbles. The extended 24-month aging "sur latte" (on the lees) further refines the wine, adding complexity and depth.
